The activity consists in the elaboration of flavored chocolate “ganaches” and in the learning process of the chocolate “Temperagem” for the preparation of truffles of different chocolates with dried fruits and citrus fruits from the Algarve region.
In the workchcoco are included all the materials, cookbook, certificate, and in the end the participants still make their box in “origami” to take the chocolates home.
FACILITATOR: Dora Barradas is a self-taught chocolate teacher, started this passion to make and teach how to make, bonbons, truffles and other delicacies in chocolate in 2012 and since then she has never stopped “getting her hands on chocolate” and making flavor combinations. He has deepened his knowledge with some chefs such as José Domingos da Algarve Cuisine Academy, António Marques da Denegro and Carlos Valente. Likes to use local and regional products.
